Bulk Beef
Our grass-fed, certified organic beef is aged minimum 14 days for tenderness, and cut to retail quality, wrapped and frozen.
Our fee is based on the carcass weight, which is the weight of the carcass before it is cut into steaks, roasts, etc. with the bones and trim still on. The final cost includes the $0.68/lb cutting & wrapping and $75/animal butchering fee. Take home weight is 56-66% of carcass weight depending on how you choose to get it cut; contact us for cutting recommendations.

Whole Beef: $2.75/lb, average carcass weight 640 lbs. Approx final cost $2270, with take home weight approx. 390 lbs.
Half Beef: $2.80/lb, average carcass weight 320 lbs. Approx final cost $1151, with take home weight approx. 195 lbs.
Quarter Beef: $2.85/lb, average carcass weight 160 lbs. Approx final cost $583, with take home weight approx. 97 lbs. This includes a mix of cuts from the front and hind quarters.

- Custom bulk orders (wholes, sides and quarters of beef) require a non-refundable deposit of $50 to secure your order.
- Bulk beef is available from August to October. The order deadline for custom bulk beef in 2011 is Oct 15, 2011.
- Once we receive your order, we give our butcher your phone number. Riverside Meats will then phone you for your cutting instructions. After your order is cut, wrapped and frozen, it will return to Vale Farms.
You receive your meat according to the option you chose on the order form.
Options are:
- Bulk orders need to be picked up at farm at a prearranged time.
- Pick up at the Kelowna Farmer’s Market may be available. Please contact us.
- Have it sent by delivery truck to a depot, your business address, or home (home shipping is an additional $35 on top of shipping cost).
Family Packs
Available all year round. Our family pack is actually 1/8 of an animal, is pre-packaged and gives a 15% discount compared to buying individual cuts. It is a nice basic selection of cuts: the pack is 29-38 lbs for $7.00/lbs. Here’s what’s in the pack:
- Min of 14 ground beef
- 2 Stir-fry
- 1 Stew
- 3 T-Bone Steaks
- 3 Rib Steaks
- 2 Top-sirloin Steaks
- 2 Roasts (Either 1 Sirloin Tip Roast and 1 Blade Roast Or 1 Cross-Rib Roast and 1 Inside Round Roast)
On average, the cost is about $210.00. You can add additional cuts at a 5% discount
